Inspired Mango Coconut Popsicles

This summer has been full of new projects, opportunities to grow in to a fuller version of myself and looking at things with a fresh perspective.

In all this change and new experience, I’ve found myself looking towards Inspired Action, a lot. It has been helping me keep myself motivated, especially when I’m taking on something I don’t feel as confident in and encouraged me to make sure I’m following through when I have a tendency to procrastinate, especially when it comes to sharing my writing.

I’m a creative writer and usually have to be intuitively called to write. A spark of inspiration, an overwhelming emotion or… asked to share my recipes with you.  This last one isn’t always as easy, these usually come with deadlines from my loving teammates, which I’m more than happy to answer, but need a little boost of inspiration, fearless creativity + motivation to create that spark!

So I thought creating a fun recipe to break through my occasional writer's block AND give me that inspired action I need was in order.

Ingredients

Other Equipment

  • Blender, we love this Vitamix!
  • Popsicle Mold, this kit has everything you need!

Method

  1. Add all ingredients into the blender and blend until combined.
  2. Fill popsicle mold with mixture and place in the freezer for 6-8 hours until firm.
  3. Remove frozen pops from the freezer and run mold under warmer water, just long enough to release the popsicles from the mold.
  4. Wrap in cellophane bags and keep in the freezer until you’re ready to eat.
